This bread is moist and delicious. It is a good way to sneak in some green veggies into your diet. It also freezes well so you can put the extra loaf in the freezer.This recipe is peanut, tree nut, soy and milk free.

Ingredients

  • 4 eggs
  • 2 cups sugar
  • 3 ½ cup flour
  • 1 ½ tsp baking soda
  • 1 ½ tsp salt
  • 1 tsp cinnamon
  • ¾ tsp baking powder
  • 2 cup blended zucchini
  • 1 cup raisins or cranberries or milk free chocolate chips (optional)

Beat eggs and sugar till fluffy. Add oil and vanilla. Mix dry ingredients. Add to egg mixture, alternate with zucchini. (For variations: Add raisins or cranberries or milk free cholocalte chips, if you like). Pour into 2 greased and lightly floured bread pans. Bake at 350 degrees for one hour or until tester inserted into center comes out dry.

Step 1
